The 4th of July is one of my family’s favorite holidays. Fireworks, camping, BBQing, endless playing in the sunshine…I don’t know who loves it more, the munchkin or the hubby! {LOL} Every year we celebrate by spending time with our best friends. The kiddos run around playing like crazy, we watch an amazing fireworks display and we always end up eating way too much food. {That’s my favorite part!} This year I decided to bring a super yummy…and super easy…Red, White & Blue Layered Cheesecake. And true to form, I served them in individual portions and put my own spin on them by creating a chocolate chip cookie crust. {YUM, right?!?}


  • 1 package Ready-To-Bake Chocolate Chip Cookie Dough
  • 1 box Instant Cheesecake Mix
  • 2 cups Milk
  • 1 carton Fresh Blueberries
  • 1 carton Fresh Strawberries (diced)


  1. Bake chocolate chip cookies according to package instructions
  2. While cookies are baking, whisk instant cheesecake mix and 2 cups of milk
  3. Allow cheesecake mix to set in refrigerator for at least 5 minutes
  4. Once cookies have cooled, place them in a reclosable bag and crush

{These steps can be done the day before}

To Assemble Layered Cheesecake:

  1. Choose the serving dish of your choice
  2. Begin by gently pressing a thick layer of cookie crumbs into the bottom of the dish
  3. Alternate layers of cheesecake, blueberries, cheesecake and diced strawberries
